Ecuadorean-born Alfonso reached a career peak working for Blue Hill's chef and co-owner Dan Barber, when he decided to strike out on his own with the farm-to-table offerings of Casa Del Chef Bistro. 

Alfonso is more than a restaurateur -- he runs the kitchen for the near-by Academy of the City charter school, part of the NYC Department of Education system.

This is sugarcane liquor, which comes from right next to my town back in my country, in Gualaceo, Ecuador. 

​

It is so special for me because number one, I grew up on a sugarcane farm. And number two, it reminds me of my ancestors.
