Palm moved from Thailand to Chicago to get his MBA at DePaul.
To pay off his college loans, his friend invited him to take a part-time job making sushi (even though he knew nothing about it) because Thai kitchens were too hot.
Palm worked several years making sushi in Chicago and then in New York City, starting in 2013.
He spent four years at SEA Thai in Brooklyn, first opening a sushi station, and then promoted to the head chef. The owner offered to back Palm for his own place and was turned down five times.
Palm unveiled a late-night sake bar in Jackson Heights, became the head chef at Sushi By Bou, and then opened the Thai-mixed-with-Japanese speakeasy Sushi On Me in January 2020. Tamarind sauce with smoked salmon, anybody?

My brother brought it from Thailand to New York, and gave it to me. He said, "This will protect you. It's like a belief in Thailand."
It's made of wood and hand-carved. The meaning of the duck is to be strong. I don't know why, but when I'm working, I feel like it has to stick with me all the time.
No one can understand, but just myself, I can understand the meaning. It shows respect for me.
